Name: White Bean and Spinach Soup
Ingredients: 1 tbsp olive oil; 1 yellow onion (diced); 6-8 cloves garlic (minced); 6 cups vegetable broth; 15 oz can diced tomatoes (drained (or 3 fresh tomatoes, diced)); 1 tsp sugar; 1 tbsp Italian seasoning; 1 tsp salt; ½ tsp pepper; 4 15 oz cans white beans (cannellini) (drained and rinsed); 4 cups baby spinach (~ 6 oz); ¾ cup Parmesan cheese (fresh grated)
