Baked Potatoes

Course Dinner, Side Dish
Servings 4

Ingredients
  

  • 4 large baking potatoes
  • ¼ cup olive oil
  • salt and pepper to taste
  • optional toppings spinach mushroom & onion / cottage cheese and salsa / chili cheese / broccoli cheese

Instructions
 

  • Preheat oven to 375°F.
  • Scrub potatoes thoroughly to remove dirt. Dry with a towel.
  • Place each potato on a piece of aluminum foil. Drizzle with olive oil and season with salt and pepper. Wrap each potato tightly in foil and place on a baking sheet.
  • Bake 60-75 min or until tender when pierced with a fork.
  • Carefully unwrap potatoes. Slice each potato open lengthwise and fluff insides with a fork.
  • Load with choice of toppings.

Notes

Optional toppings:
Spinach Mushroom & Onion
In a skillet, saute mushrooms & onions in olive oil until tender. Add spinach and cook until wilted. Season with salt and pepper.
Cottage Cheese & Salsa
Combine cottage cheese and your favorite salsa in a bowl and mix well.
Chili Cheese
Warm chili and top with shredded cheese.
Broccoli Cheese
Steam or microwave broccoli until tender. Top with shredded cheddar cheese.
