Tammie’s Apple Cake

Ingredients
  

  • 1 cup sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 cups flour all-purpose
  • ¼ tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • ¼ tsp baking soda
  • 2 cups tart apples (granny smith) peeled, finely chopped
  • 1 cup walnuts finely chopped

Instructions
 

  • Preheat oven to 350.
  • In a large bowl, beat sugar, oil, eggs, and vanilla until well blended.
  • Combine the flour, baking soda, salt cinnamon, and baking powder. Gradually beat into sugar mixture until well blended.
  • Fold in apples and walnuts.
  • Transfer mixture to a greased 9x13 baking dish. Bake 35-45 min until toothpick comes out clean.
  • For healthier version, omit oil, reduce sugar to 1 cup, and add 1 cup unsweetened apple sauce.
