tart apples (granny smith)
peeled, finely chopped

walnuts
finely chopped
Instructions
Preheat oven to 350.
In a large bowl, beat sugar, oil, eggs, and vanilla until well blended.
Combine the flour, baking soda, salt cinnamon, and baking powder. Gradually beat into sugar mixture until well blended.
Fold in apples and walnuts.
Transfer mixture to a greased 9x13 baking dish. Bake 35-45 min until toothpick comes out clean.
For healthier version, omit oil, reduce sugar to 1 cup, and add 1 cup unsweetened apple sauce.
