Tammie’s Apple Cake

Ingredients
- 1 cup sugar
- 1 cup vegetable oil
- 3 eggs
- 1 tsp vanilla extract
- 2 cups flour all-purpose
- ¼ tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- ¼ tsp baking soda
- 2 cups tart apples (granny smith) peeled, finely chopped
- 1 cup walnuts finely chopped
Instructions
- Preheat oven to 350.
- In a large bowl, beat sugar, oil, eggs, and vanilla until well blended.
- Combine the flour, baking soda, salt cinnamon, and baking powder. Gradually beat into sugar mixture until well blended.
- Fold in apples and walnuts.
- Transfer mixture to a greased 9x13 baking dish. Bake 35-45 min until toothpick comes out clean.
- For healthier version, omit oil, reduce sugar to 1 cup, and add 1 cup unsweetened apple sauce.
