Ingredients
- 2 medium potatoes cut into ½" cubes (or 102-12 small red potatoes, halved)
- 2 medium carrots cut into ½"½ slices
- 1 zucchini cut into ½" slices
- 1 red bell pepper cut into 1" pieces
- 1 tbsp olive oil
- 1 tsp dried basil
- ½ tsp sea salt
- ¼ tsp pepper
- 2 cloves garlic minced
Instructions
- In a large bowl, combine all vegetables, drizzle with olive oil, and stir to coat.
- Place in a greased 9x13 baking dish.
- Bake uncovered at 375 degrees for 35 min or until tender.
