Name: Roasted Chestnut Stuffing

Ingredients: 8 cups cornbread (cut into ¾-inch cubes (or 8 cups of whole wheat bread)); 2 cups chestnuts (roasted, peeled, and coarsely chopped); 5½ tbsp butter (divided); 1 small yellow onion (diced (about 1¼ cup)); 2 large celery stalks (diced (about ¾ cup)); 1 cup button mushrooms (finely chopped); 16 oz pork sausage (or plain ground pork); 2-3 cloves garlic (minced); 1 tbsp fresh thyme (finely chopped); 2 tbsp fresh parsley (flat leaf is best finely chopped); 1 tbsp rosemary (finely chopped); 2 cups broth (reduced-sodium, divided); 2 eggs; salt and pepper (to taste)
