Ingredients: ¼ cup creamy peanut butter; 2 tbsp low-sodium soy sauce; 2 tbsp honey; 2 tbsp water; 2 tsp toasted sesame oil; 2 tsp olive oil; 3 scallions (sliced, white and green parts separated (or ½ cup of onion, diced)); 1 serrano (or jalapeño pepper, seeded and minced (2 tsp)); 1 tbsp fresh ginger (minced); 2 tsp fresh garlic (minced); 1 lb ground bison; 1 can water chestnuts; 16 bibb butter lettuce leaves; 1 cup cooked rice; 1 cup English cucumber (halved and thinly sliced); ½ cup fresh cilantro leaves; 1 lime (wedged, for serving)
