Preheat oven to 375°F.
Scrub potatoes thoroughly to remove dirt. Dry with a towel.
Place each potato on a piece of aluminum foil. Drizzle with olive oil and season with salt and pepper. Wrap each potato tightly in foil and place on a baking sheet.
Bake 60-75 min or until tender when pierced with a fork.
Carefully unwrap potatoes. Slice each potato open lengthwise and fluff insides with a fork.
Load with choice of toppings.
