Baked Black Bean Taquitos

Ingredients
  

  • 2 cans black beans 14 oz each, drained and rinsed
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 tsp paprika
  • ½ tsp cumin powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 cup vegetable broth
  • tbsp lime juice
  • ¼ cup cilantro chopped
  • 1 tbsp butter
  • 12 6-inch flour tortillas
  • 2 tbsp olive oil for brushing

Instructions
 

  • In a medium saucepan, simmer the beans, onion, garlic, veggie stock, and spices for 15 min, until the onion softens, and the liquid has almost evaporated.
  • Add the butter, lime juice, and cilantro, and mash everything together with a potato masher.
  • Lay out the tortillas on a flat surface and divide the bean mixture among the 12 tortillas (about 3 tbsp for each). Roll up each tortilla tightly and place it seam side down.
  • Line a large baking tray with parchment paper or a silicone mat. Spread about 2 tbsp of oil evenly across it.
  • Place the taquitos seam side down on the baking tray, making sure that you are leaving at least ½ inch of space between each one.
  • Brush a thin layer of oil on each taquito.
  • Bake at 400°F for 20-25 min, until the tortillas start to brown.
  • Avocado Crema
  • Place 1 large avocado (without the pit and peel) with ⅓ cup of mayonnaise, 2 tbsp of lemon juice, and salt and pepper (to taste) in a smoothie cup or a blender. Process until smooth and use as a dip for your taquitos.
