Bison & Cucumber Lettuce Wraps with Peanut Sauce

Ingredients
  

  • ¼ cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp water
  • 2 tsp toasted sesame oil
  • 2 tsp olive oil
  • 3 scallions sliced, white and green parts separated (or ½ cup of onion, diced)
  • 1 serrano or jalapeño pepper, seeded and minced (2 tsp)
  • 1 tbsp fresh ginger minced
  • 2 tsp fresh garlic minced
  • 1 lb ground bison
  • 1 can water chestnuts
  • 16 bibb butter lettuce leaves
  • 1 cup cooked rice
  • 1 cup English cucumber halved and thinly sliced
  • ½ cup fresh cilantro leaves
  • 1 lime wedged, for serving

Instructions
 

  • Whisk peanut butter, soy sauce, honey, water, and sesame oil in a small bowl.
  • Heat olive oil in a large nonstick skillet over medium heat. Add scallion whites or onion, serrano, ginger, and garlic; cook until starting to soften, about 2 min. Add bison; cook, breaking it up with a spoon or potato masher, until cooked through, 3 to 4 min.
  • Add the peanut sauce to the bison mixture; cook until the sauce has thickened, about 3 min. Remove from heat. Stir in water chestnuts and scallion greens.
  • To serve, make 8 sets of 2 lettuce leaves. Divide rice, the bison mixture, cucumber, and cilantro among the lettuce cups. Serve with lime wedges.
