Hashed Hominy

Ingredients
  

  • 2 cups canned hominy strained
  • 1 cup onion or ramps diced
  • 1 cup green pepper diced
  • 1 cup summer squash diced
  • 1 cup zucchini diced
  • 2 tbsp olive oil
  • 4 eggs beaten

Instructions
 

  • Using 1 tbsp oil, brown hominy in skillet over medium heat.
  • After hominy has browned, add another tbsp of oil with onion, green pepper, squash, and zucchini. Cook vegetables for about 3 min then push all vegetables aside and add the eggs to scramble.
  • Once eggs are fully cooked, stir all ingredients together and enjoy. Can add any leftover diced meat, cayenne pepper, or spinach, as desired.
