Oven Roasted Vegetables

Ingredients
  

  • 2 medium potatoes cut into ½" cubes (or 102-12 small red potatoes, halved)
  • 2 medium carrots cut into ½"½ slices
  • 1 zucchini cut into ½" slices
  • 1 red bell pepper cut into 1" pieces
  • 1 tbsp olive oil
  • 1 tsp dried basil
  • ½ tsp sea salt
  • ¼ tsp pepper
  • 2 cloves garlic minced

Instructions
 

  • In a large bowl, combine all vegetables, drizzle with olive oil, and stir to coat.
  • Place in a greased 9x13 baking dish.
  • Bake uncovered at 375 degrees for 35 min or until tender.
